so I don't have a shop so it isn't as though I have bagels laying around waiting to be bought because I would have lots of wastage so I bake to order but that also has it's own challenges. Baking to order means that I need to bake in batches otherwise it gets very fiddly and commercially not good at all.

This is my kitchen. It is a little bigger than your average kitchen but i  term of functionality it is exactly the as most other kitchens. I have to ovens, one hob and sink.
